Feta Cheese

Fresh, Salty, Delicious and Greek

This is a semi-hard and crumbly goat cheese

Feta is a Greek traditional white cheese that has been cured in a brine solution. It can be crumbled over a salad, added to an omelette, or just served with olive oil and herbs. Traditionally in Greece, Feta is made from the milk of Sheep (70%) and Goat (30%). Here at RKS Farms it is made from 100% goat milk. Much of the store bought Feta in the USA is made strictly from cow milk and does not have the traditional flavor or texture. RKS Farm Feta is made by adding a bacteria culture to goat milk and then allowed to ferment for 24 hours. The curd is collected into cheese cloth and hung to drain for 12 hours. The curds are then pressed in a cheese mold for another 12 hours. The semi-hard blocks of cheese are cured in heavy brine for 72 hours. The cured blocks of Feta are then cut into cubes and packed into 16 oz glass canning jars. We sell Feta in Brine and Feta marinated in olive oil with herbs (pepper corns, garlic, rosemary and thyme). Both products are absolutely delicious.

Ricotta Cheese

Fresh and Mild Tasting

Soft, delicious goat milk curds

Ricotta is an Italian cheese that is often made from the whey drained away after other cheeses are made. RKS Farms ricotta is made from full-fat goat milk for a rich creamy tasty cheese. Unlike many cheeses that are made by fermenting the milk to form a curd, ricotta is made without a culture and without fermentation. Goat milk is heated to around 190F and then white vinegar is added and the milk forms a curd. These curds are strained through cheese cloth and allowed to drain for about 25 minutes. The cheese is then lightly salted, weighed and packed in our plastic tubs. Ricotta is used in savory dishes such as lasagna, calzone, manicotti and ravioli. It can be added to smoothies as a great protein boost. Ricotta is also used in pastries and other sweets such as lemon-ricotta cake.
